Our love of American food and all things barbeque is a trend that continues to grow and from September British Airways customers will be able to enjoy a taste of the Deep South on board. The airline is launching its first specially created pulled pork sandwich on flights. The seasoned pulled pork recipe has been specially honed by British Airways chefs over the past six months and is a British take on the traditional American delicacy. The meat is slow cooked for 14 hours and then hand pulled, before fried sage and onions are added to ensure a full, smoky flavour, even at 35,000 ft, where your taste buds are lessened by 30 per cent. Mark Tazzioli, British Airways’ chef, said: “Pulled pork is incredibly fashionable right now following the emergence of gourmet food trucks, craft butchers and rustic restaurants. As taste buds are affected at altitude, we have created a special rub, which has scored highly in taste-tests. We are confident this new dish will prove popular with our customers who love comfort food when they fly.” Served with apple, ginger and sultana chutney and a side of candy stripe beetroot, red beetroot and purple potato crisps, the tender pork is served in a handmade artisan bread from Manoucher Etminan, made to a secret Persian recipe developed to keep its taste and texture in the air. The sandwich will be served in British Airways’ First cabin from September and on flights to the Middle East slow roasted duck will be available. The addition of pulled pork to the airline’s in-flight menu follows other new catering developments, with British Airways now serving fish and chips and a new ‘Flying Gourmet Burger’ on board.
